Light oat-based apple pancakes sweetened with honey and spiced with cinnamon and nutmeg.

- 1 egg
- 1 apple, sliced
- 2 tablespoons honey
- 1 tablespoon coconut oil, melted
- 1/2 cup oats, ground
- 1 teaspoon cinnamon
- 1/3 teaspoon nutmeg
- 1/2 teaspoon baking soda
- 1/2 teaspoon vanilla extract
- 1 tablespoon yogurt
- 1 tablespoon chopped walnuts or almonds
- Coconut oil for cooking
- Fruit (optional, for topping)
- Honey (optional, for topping)
- Nuts (optional, for topping)
- Yogurt or whipped cream (optional, for topping)
Instructions
- Slice the apple and blend it with the egg, honey, and melted coconut oil in a blender or using a hand blender until smooth.
- Add the ground oats, cinnamon, nutmeg, baking soda, and vanilla then blend again until well combined.
- Stir in the chopped nuts without blending.
- Heat a non-stick pan over medium to medium-high heat and coat the surface with coconut oil.
- Pour spoonfuls of the batter into the pan to form small, palm-sized pancakes (about 3-4 pancakes per batch).
- Cook until bubbles appear on the surface and the pancakes are no longer liquid (about 1 minute), then flip and cook another 30 seconds to 1 minute until golden brown.
- Remove the pancakes from the pan and repeat with the remaining batter.
- Serve and enjoy: top pancakes with fruit, honey, nuts, yogurt, or whipped cream as desired.
