Description

Light oat-based apple pancakes sweetened with honey and spiced with cinnamon and nutmeg.


Ingredients

  • 1 egg
  • 1 apple, sliced
  • 2 tablespoons honey
  • 1 tablespoon coconut oil, melted
  • 1/2 cup oats, ground
  • 1 teaspoon cinnamon
  • 1/3 teaspoon nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon yogurt
  • 1 tablespoon chopped walnuts or almonds
  • Coconut oil for cooking
  • Fruit (optional, for topping)
  • Honey (optional, for topping)
  • Nuts (optional, for topping)
  • Yogurt or whipped cream (optional, for topping)

Instructions

  1. Slice the apple and blend it with the egg, honey, and melted coconut oil in a blender or using a hand blender until smooth.
  2. Add the ground oats, cinnamon, nutmeg, baking soda, and vanilla then blend again until well combined.
  3. Stir in the chopped nuts without blending.
  4. Heat a non-stick pan over medium to medium-high heat and coat the surface with coconut oil.
  5. Pour spoonfuls of the batter into the pan to form small, palm-sized pancakes (about 3-4 pancakes per batch).
  6. Cook until bubbles appear on the surface and the pancakes are no longer liquid (about 1 minute), then flip and cook another 30 seconds to 1 minute until golden brown.
  7. Remove the pancakes from the pan and repeat with the remaining batter.
  8. Serve and enjoy: top pancakes with fruit, honey, nuts, yogurt, or whipped cream as desired.
