Description
Crispy fried broccoli and cheese bites made with Colby, Cheddar, Velveeta and Panko breadcrumbs.

- 1 1/2 cups fresh broccoli florets
- 1 cup shredded Colby cheese
- 1 cup shredded Cheddar cheese
- 4 oz. Velveeta, cut into small cubes
- 1/2 teaspoon crushed red pepper flakes
- 2 1/4 cups Panko breadcrumbs, divided
- 1 egg, lightly beaten
- 1/2 cup all-purpose flour
- 2 eggs, lightly beaten (for breading)
- Vegetable or canola oil (for frying)
Instructions
- Steam the broccoli until soft, then let it cool slightly.
- Finely chop the cooled broccoli and place it in a medium to large bowl.
- Add the Colby cheese, Cheddar cheese, Velveeta, red pepper flakes, 3/4 cup Panko breadcrumbs, and 1 beaten egg to the broccoli; mix well to combine.
- Scoop about 1-2 tablespoons of the mixture and form it into balls.
- Place the balls in the refrigerator for 1 hour to firm up.
- Prepare three bowls for breading: one with flour, one with beaten eggs, and the last with the remaining Panko breadcrumbs.
- Heat oil to 375?F in a large skillet, using a thermometer to monitor the temperature.
- Coat each broccoli ball in flour, then dip it into the egg, and finally roll it in Panko breadcrumbs.
- Fry the broccoli bites in batches, ensuring space between each one, for a few minutes on each side until golden brown and crispy.
- Once fried, place the bites on a paper towel-lined tray to absorb any excess oil.
- Serve the cheesy broccoli bites warm and enjoy!
