Description

Moist cranberry orange loaf flavored with orange zest and finished with a simple orange glaze.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 cup brown sugar
  • 1 tablespoon orange zest (from a medium orange)
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup melted butter (or vegetable oil)
  • 1/2 cup orange juice
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups fresh cranberries, rinsed
  • 1/2 cup confectioners? sugar
  • 1 tablespoon orange juice

Instructions

  1. Preheat oven to 350?F and lightly grease a 9×5-inch loaf pan with butter or cooking oil.
  2. In a large bowl combine flour, baking powder, baking soda, brown sugar, orange zest, ground cinnamon, and salt; whisk until evenly distributed.
  3. In a medium bowl whisk together melted butter (or oil), orange juice, eggs, and vanilla extract until combined.
  4. Pour the wet mixture into the dry ingredients and fold with a rubber spatula until just combined and no dry streaks remain; do not overmix.
  5. Fold in the fresh cranberries until evenly distributed, being careful not to overmix.
  6. Pour the batter into the prepared loaf pan and bake for about 55 minutes or until a toothpick inserted into the center comes out clean; let cool in the pan on a wire rack for 10?15 minutes then invert to remove the loaf.
  7. In a small bowl combine the confectioners? sugar and 1 tablespoon orange juice, stirring until smooth and pourable; adjust with more sugar or juice as needed for desired consistency.
  8. Drizzle the cooled loaf with the orange glaze and serve.
