Spiced chicken meatballs flavored with Thai red curry paste, ginger, garlic, and cilantro; served with a peanut dipping sauce.

- 1 lb ground chicken
- 1/2 cup panko breadcrumbs (or gluten-free)
- 2 tablespoons Thai red curry paste
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 egg, beaten
- 1/4 cup cilantro, chopped
- 1 tablespoon lime juice
Instructions
- Preheat the oven to 400?F (200?C) and line a baking sheet with parchment paper.
- In a large bowl, mix ground chicken, panko breadcrumbs, red curry paste, garlic, ginger, beaten egg, cilantro, and lime juice until combined.
- Shape the mixture into 1-inch meatballs and place them on the prepared baking sheet.
- Bake for 18?20 minutes or until golden brown and cooked through.
- Serve with peanut dipping sauce.
