Description

Spiced chicken meatballs flavored with Thai red curry paste, ginger, garlic, and cilantro; served with a peanut dipping sauce.


Ingredients

  • 1 lb ground chicken
  • 1/2 cup panko breadcrumbs (or gluten-free)
  • 2 tablespoons Thai red curry paste
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 egg, beaten
  • 1/4 cup cilantro, chopped
  • 1 tablespoon lime juice

Instructions

  1. Preheat the oven to 400?F (200?C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix ground chicken, panko breadcrumbs, red curry paste, garlic, ginger, beaten egg, cilantro, and lime juice until combined.
  3. Shape the mixture into 1-inch meatballs and place them on the prepared baking sheet.
  4. Bake for 18?20 minutes or until golden brown and cooked through.
  5. Serve with peanut dipping sauce.
