Description

Oven-baked baby potatoes stuffed with sour cream, shredded cheddar and bacon bits.


Ingredients

Scale
  • 1.5 lb bag of baby potatoes
  • 2 tbsp olive oil
  • 1/4 cup sour cream
  • 1/4 cup cheddar cheese, shredded
  • 1/4 cup bacon bits

Instructions

  1. Preheat the oven to 425?F (220?C).
  2. Cut a slice halfway down into each potato.
  3. Add the potatoes to a bowl, pour the olive oil over them, and toss until well coated.
  4. Arrange the potatoes on a baking sheet and bake for 30?40 minutes, until tender.
  5. Remove from the oven and let cool a few minutes, then gently smoosh the sides to open the center.
  6. Transfer the sour cream to a piping bag or a zip-top bag, snip off the end, and pipe a small amount into the center of each potato.
  7. Sprinkle shredded cheddar and bacon bits over each potato.
  8. Serve warm and enjoy.
