Description

Mini phyllo cups filled with feta, tomato, cucumber, green onion, and herbs.


Ingredients

  • 15 phyllo shells
  • 1/4 cup crumbled feta cheese
  • 1/4 cup tomato, finely diced
  • 1/4 cup cucumber, finely chopped
  • 1 green onion, diced
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • 1/8 tsp dried basil
  • 1/8 tsp garlic powder
  • 1/8 tsp salt
  • 1/8 tsp black pepper
  • 1/8 tsp dried dill

Instructions

  1. Chop the tomato, cucumber, and green onion (peel the cucumber first if desired).
  2. Combine the crumbled feta, chopped tomato, chopped cucumber, and diced green onion in a small bowl.
  3. In a separate small bowl, whisk together the olive oil, lemon juice, dried basil, garlic powder, salt, black pepper, and dried dill.
  4. Pour the dressing over the feta and vegetables and toss to combine.
  5. Divide the mixture evenly among the phyllo shells and serve.
