- 15 phyllo shells
- 1/4 cup crumbled feta cheese
- 1/4 cup tomato, finely diced
- 1/4 cup cucumber, finely chopped
- 1 green onion, diced
- 1 tbsp olive oil
- 1 tsp lemon juice
- 1/8 tsp dried basil
- 1/8 tsp garlic powder
- 1/8 tsp salt
- 1/8 tsp black pepper
- 1/8 tsp dried dill
Instructions
- Chop the tomato, cucumber, and green onion (peel the cucumber first if desired).
- Combine the crumbled feta, chopped tomato, chopped cucumber, and diced green onion in a small bowl.
- In a separate small bowl, whisk together the olive oil, lemon juice, dried basil, garlic powder, salt, black pepper, and dried dill.
- Pour the dressing over the feta and vegetables and toss to combine.
- Divide the mixture evenly among the phyllo shells and serve.
