- 2 large sweet potatoes, washed and scrubbed
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika
- 3/4 cup crumbled feta cheese
- 1/4 cup honey
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat your oven to 425?F (220?C) and line a baking sheet with parchment paper.
- Slice the sweet potatoes into 1/2-inch thick rounds.
- In a large bowl, toss the sweet potato rounds with olive oil, salt, black pepper, and smoked paprika until evenly coated.
- Arrange the sweet potato slices in a single layer on the prepared baking sheet.
- Roast in the preheated oven for 25-30 minutes, turning halfway through, until they are tender and golden brown.
- Remove from the oven and allow to cool slightly.
- Arrange the roasted sweet potato rounds on a serving platter.
- Sprinkle crumbled feta cheese over the top of the sweet potatoes.
- Drizzle with honey and garnish with freshly chopped parsley.
- Serve warm or at room temperature.
