Sweet cheesecake-style tortilla sandwich filled with cream cheese and served with strawberry sauce.

- 1/4 cup cream cheese, room temperature
- 1 tablespoon sugar
- 1/4 teaspoon vanilla extract
- 2 (8-inch) tortillas
- 1 teaspoon unsalted butter, room temperature
- 1/2 teaspoon sugar
- 1/4 teaspoon cinnamon
- Strawberry sauce, to taste
Instructions
- In a small bowl, beat the cream cheese, 1 tablespoon sugar, and vanilla extract until smooth and creamy.
- Spread the cream cheese mixture evenly on one tortilla and place the second tortilla on top to form a sandwich.
- Spread the softened butter on the outside of both tortillas.
- Heat a pan over medium heat and cook the tortilla sandwich for 2?4 minutes per side, or until lightly golden brown and crispy.
- In a small bowl, mix the remaining 1/2 teaspoon sugar and cinnamon, then sprinkle the cinnamon-sugar mixture on top once the quesadilla is done cooking.
- Slice the quesadilla and serve with strawberry sauce for dipping or drizzling.
